Soave Classico DOC “Mondello”
This elegant Soave Classico is a white wine with ancient traditions, renowned for its harmony and refined pleasantness. It offers a delicate bouquet of elderflower and vine flowers, captivating and aromatic, followed by a palate that combines elegance with perfect balance.
Grape Varieties:
Garganega, Chardonnay, Trebbiano di Soave.
Region / Vineyard:
Eastern hills northeast of Verona. Vineyards average 25 years old, grown on morainal soils with tufa and alluvial deposits, partly calcareous, partly gravelly-sandy.
Vinification & Ageing:
After roller crushing, the grapes undergo light cold maceration to extract aroma and varietal typicity. The flower must is separated to preserve aromatic purity, followed by temperature-controlled fermentation (15-18°C) and malolactic fermentation. The wine finishes with brief ageing in steel tanks and bottle.
Tasting Notes:
Pale straw colour. Delicate floral aromas of elder and vine flowers. On the palate, elegant and harmonious with a refreshing, balanced finish.
Food Pairing:
Perfect as an aperitif or paired with light lunches, starters, first courses, fish, and shellfish.
Serving Temperature:
10-12°C.
