Valpolicella Classico Ripasso DOC “Santambrogio”
This prestigious Ripasso is a red wine crafted for ageing, with a deep garnet red colour. Produced from grapes grown in the hilly vineyards of Sant’Ambrogio di Valpolicella, it undergoes refermentation on the marc of classic Recioto and Amarone, enhancing its structure and complexity.
Grape Varieties:
Corvina, Corvinone, Rondinella, old indigenous vines, and other recommended varieties.
Region / Vineyard:
Hills northwest of Verona, Sant’Ambrogio di Valpolicella. Vines average 28 years (range 10-40, some indigenous vines over 50), rooted in thin, stony Neolithic calcareous soils.
Vinification & Ageing:
After destemming and crushing, fermentation occurs in heat-controlled tanks with cap punching for optimal extraction. In late winter, the Valpolicella is refermented on Recioto and Amarone pomace to enhance body and intensity. It is then racked in early spring and aged in large oak barrels before bottling and further bottle ageing.
Tasting Notes:
Deep garnet red. Complex bouquet with marked aromas of plum and cooked marasca cherry. Full-bodied and robust on the palate with perfect harmony and an elegant, persistent finish.
Food Pairing:
Ideal with red meats, game, roasts, and stews. Serve in broad-rimmed crystal glasses.
Serving Temperature:
18-20°C.
